What to make for dinner?

Okay, this post is not a recipe, but I can never think of what to make for dinner! I usually ask my kids on Sunday to think of a "pick" for the next week. Sometimes they have to help me with dinner the night of their pick. They have to choose a main dish, a veggie, and sometimes they choose a bread/drink/dessert. Sometimes I choose the last three or they don't have one.... Anyway, here are some ideas for meals, mostly for myself when I can't seem to think of anything to cook...

Ranch Chicken

Dip boneless, skinless, chicken breasts in ranch dressing. Roll in bread or cracker crumbs. Bake at 350 for 45 minutes. (put a pan of water underneath for more of a moist "steaming".)

Pumpkin Bread

3 1/2 c flour
2 t soda
1 t salt
1 t cinnamon
1 t cloves
1 t nutmeg
3 c sugar
3/4 c water
2 c pumpkin
1 c oil
4 eggs

Mix evenly. Bake in greased loaf tins at 350 for 1 hour. Can frost with cream cheese frosting.

Mushroom Chicken Casserole

2 c. cooked macaroni
1 can mushroom soup
1 c milk
2 c grated cheese
4 hard boiled eggs
1 can chicken.

Cook macaroni, add soup and milk, chicken, some cheese. Put in casserole dish, remaining cheese. Bake 30 minutes at 350.

Bread and Egg Breakfast Casserole

8 slices bread, buttered
2 c diced ham
1 c grated cheese
3 green onions, chopped
12 eggs
1 1/2 c milk
1 tsp. dry mustard

line bottom of 9x13 pan with bread. sprinkle ham, cheese, and onion over bread. Beat together eggs, milk, and mustard. pour over bread. Refrigerate overnight. Before baking, mix 1 can mushroom soup and 1 1/4 c milk. Pour over top and bake at 325 for 1 1/2 hours.

Lowfat Fettucine Alfredo

1 T margarine/butter
2 small garlic cloves, minced
1 T flour
1 1/2 c. skim milk
2 T light cream cheese
1 1/4 c grated fresh parmesan cheese, divided
4 c hot cooked fettucine noodles
2 t fresh parsley

Lori's Pork Chops

1 can cream of mushroom soup
1 can golden mushroom, golden beef
6 porkchops

Braise porkchops, then add to crockpot with soups, plus one can of water. Cook 3-4 hours on low.

Crockpot Oatmeal

2 c oatmeal
4 c water
1 c apple juice
2-3 diced, unpeeled apples
1 T butter
3/4 t salt
2 T honey
1/2 c craisins

stir together in crock pot and cook overnight on low 6-8 hours. SPRAY CROCKPOT WITH NONSTICK SPRAY.

Oven Omelet

1/4 c butter
18 eggs
1 c sour cream
1 c milk
2 t salt
1/4 c chopped green onion

Mext butter in 9x13. Mix eggs, sour cream, milk, and salt until foamy. (Blender works well...) stir in onions. Pour into pan and bake at 325 about 30-35 mins, set but moist still.

Apple Chips

Thinly slice apples widthwise (using a mandolin is best--a "star" will be in the center)
line apple slices on baking sheet
sprinkle with icing sugar

Bake at 200 for 1-1/2 hours

Veggie Pizza

Crust:
2 pkg crescent rolls
2 pkg softened cream cheese
1/2 c sour cream
3/4 c mayo
1 small pkg ranch dressing
Blend ingredients together and spread on cooled crust.

Topping:
3/4 c each of: chopped broccoli, chopped cauliflower, chopped onions, chopped bell pepper, diced tomato. Blend together and place on cheese filling. Cover loosely with plastic wrap and press veggies into cheese to secure. Refrigerate and cut into squares to serve.

Crustless Quiche

1/4 c butter
1/2 c flour
6 eggs
1 c milk
1 lb monterey jack
2 c cottage cheese
1 t bkg powder
1 t salt
1 t sugar
3 oz softened cream cheese

Melt butter, add flour and cook until smooth. Beat eggs; add milk, cheese, bkg powder, salt, sugar, and flour&butter mixture. Stir until well blended. Pour into well greased 9x13 pan. bake uncovered 45 mins at 350.

Orange Julius

12 oz can of orange juice concentrate
Pour half into blender.
Fill blender over 1/2 full with ice
capfull of vanilla
1/2 c sugar (white)
Add milk until almost full. Blend.

Fruit Punch

4 quarts apple juice
2 cherry kool aid pkg
1 strawberry kool aid pkg
1 raspberry kool aid pkg
1 quart water
1 large bottle ginger ale
sugar (sweeten) to taste
add ice cubes

Fills very large punch bowl.

Ham and Cheese Ball

8 oz cream cheese, softened
1/4 c mayonnaise
16 oz chopped ham (can be flakes, leftover ham, whatever!)
2 T chopped parsley
1 tsp minced onion, or green onion
1/4 tsp dry mustard
1/4 tsp tobasco
1/2 c shredded cheese
1/2 c chopped walnuts

Beat cheese and mayo until smooth. Stir in next six ingredients. Cover and chill several hours. Form into 2 medium cheeseballs and roll in walnuts.

Tangy Grill Sauce

1 can tomato soup
2 T of each: brown sugar, lemon juice, vegetable oil
1 T worcestershire sauce
1 t garlic powder

Cinnamon Syrup

1 c sugar
1/2 c water
1/2 c light corn syrup
3/4 t cinnamon

Mix in a sauce and boil for 2 mins, then add 1/2 c evaporated milk.

Christmas Morning Oatmeal Pancakes

2 c flour
2 c oatmeal
1/2 c sugar
1 t salt
1 T baking powder
add 2 eggs
3 c milk
1/3 c vegetable oil
Mix lightly just until moistened. Cook on hot griddle.

Very good, but very filling! :)

Spaghetti alla Carbonara

8 oz spaghetti noodles
3 eggs
salt and pepper
1 c fresh cream
3-4 oz bacon (pancetta if possible)
3 oz parmesan (fresh)

Lightly fry bacon. Beat eggs in bowl and add salt.and pepper. Combine cheese and cream. Drain noodles and pour eggs, bacon, and cheese/cream mixture on top of noodles in pan. Cook until eggs are lightly cooked.

Blender Wheat Pancakes

1 c wheat kernels
1 1/4 c milk
1 egg
1/3 c oil
1 T baking powder
1/2 t salt

Wash wheat. Drain. Add milk and wheat to blender and mix 5 mins. Add egg, oil, powder and salt. Blend 2 minutes. Cook on greased griddle.
