Peanut Butter Cookie Cups

2 c flour
1/2 tsp baking soda
1/4 tsp salt
1 1/4 c brown sugar, (packed)
1 1/4 c white sugar, plus 1/4c, divided
1 c butter
3 large eggs
1 c peanut butter
2 tsp pure vanilla extract
36 mini peanut butter cups, unwrapped

Preheat oven to 300. Combine flour, soda, and salt. Mix with a whire whisk (akin to sifting.) Set aside. Add butter and mix to form a grainy paste , scraping the side of bowl. Add eggs, pb, and vanilla, and mix at med speed until light fluffy. Add flour mixture, and mix at low speed until just mixed (do not overmix.) Roll dough into a ball, roll in white sugar. Place in greased mini-muffin tin, press dough even, and bake 18-22 mins. Immediately place a pb cup in each cup and press gently. Cool for 10 mins, then carefully remove from pans.
