Cheesecake Tarts

I had these at a wedding. They were superb!

Tart Shells

2 1/2 c flour
3/4 c powdered sugar
1/2 lb butter
1 egg

Mix together. Form into balls and press into tart tins. Cook at 375 for 10-12 mins. Cool, then pop out of tins.

Cream Cheese Filling

1-8oz cream cheese, softened
1 pkg vanilla chips melted into 1/4 c. unwhipped whipping cream
Mix  together with beaters, then put a dollop in each tart crust. Add fruit.

Glaze:
1/2 c pineapple juice
1/4 c sugar
2 T cornstarch

Cook on stove until boiling and thickened. Pour over fruit. Seriously divine.
