1/2 c chopped onion
1/2 c sliced mushrooms
1/4 c celery or green pepper
1 clove of minced garlic
1 T butter
3/4 c long grain rice
1 1/2 t instant chicken or beef granules (sometimes she adds more)
1/8 t pepper
2 slices of bacon (pre-cooked, drained and crumbled)** true confession: I buy a big bag of real bacon bits from Costco that I use in things like this, quiches, fried rice, topping for potato soup, etc. I hate the smell after bacon cooks! I also keep it in the freezer, since I usually use it in baking)
In a medium saucepan, cook onion, celery (or green pepper), garlic, and mushrooms in butter until tender, but not brown. Stir in rice, bouillion, pepper, and 1 1/2 c water. Cover. Bring to a boil, stirring once or twice, then reduce heat to low. Cover and simmer 15 mins or until rice is tender and liquid is absorbed. Stir in bacon and serve.
