Homemade Flour Tortillas

Chevy's (and Nicole's) Flour Tortillas

6 c all purpose flour
1 t baking powder
1/2 t salt (I prefer more salt, I doubled)
1/2 c vegetable shortening, cut into small pieces
2 1/2 c warm water

Add flour, bkg powder and salt together in bowl of mixer, stirring to mix well. Add shortening, turn mixer on low, and slowly pour in water. Mix on low 90 seconds until well mixed.

Scrape dough onto floured surface. Divide into two equal portions, cover with plastic wrap, and set aside to "rest" at room temp for 20 mins. THIS IS IMPORTANT.

Divide each half into 8 equal portions. With floured rolling pin (I LOVE silpin and wouldn't use any other) roll each ball into an 8 inch round. Stack rounds on a baking sheet with plastic wrap between each tortilla. Let rest ten minutes.

Heat griddle to 375, lightly coat with vegetable spray and cook 1 min per side or until light brown spots form on surface.

Deep fry for sopapillas, and sprinkle with cinnamon and sugar.
