I got this recipe from Louise Plummer, and she warns that this makes chocolate cake far too accessible!
Chocolate Mug Cake
4 T flour
4 T sugar
2 T cocoa (I prefer cocoa that has some Dutch process)
1 egg
3 T milk
3 T oil
3 T chocolate chips
dash of vanilla
Add dry ingredients in your mug (we prefer a slightly oversized mug, so there is room for ice cream on top!) Mix dry, then add egg and mix thoroughly. Add chocolate chips and vanilla, then cook 3 minutes in microwave. Top with ice cream and chocolate sauce, and voila! Instant chocolate cake!
