Okay, this is the best soup ever. I am not a huge fan of lasagne, but this is even better! Make a batch of the marinara sauce in a previous post (garlic, tomato sauce, fresh basil, red pepper flakes, salt & pepper) then do 1 part marinara to 2 parts chicken broth or water (I used water.) Add 2-3 T brown sugar and simmer.
Brown 1 lb. sausage or ground beef (whatever your preference is) with garlic and finely chopped onion (I go light on the onion--I think I used 1/8 c of a purple one) For a lighter dish, you could add cooked chicken breast or turkey.
Break up about 6-8 lasagne noodles, and boil in the marinara as it simmers.
Add meat, and serve with toppings: cottage cheese/sour cream, mozzarella, parmesan. Serve with hot breadsticks. So good.
