Homemade Egg Noodles

2 c flour
3 egg yolks
1 whole egg
2 t salt
1/4 to 1/2 c water

Put flour in a bowl. Make a "well" in the center and add eggs and salt. Use hands to mix, then add water a little at a time until all the dry ingredients are incorporated. Knead dough until smooth (it will feel grainy at first.) Cover and let rest 10 mins. Divide dough into 4 equal parts, then roll VERY thin. I cut into strips with a pizza cutter. You can boil right away, or dry on a towel for a few hours. Makes about 6 c of noodles. (Must cook same day!)
