This is the soup she brought us, paired with the breadsticks. It was fantastic.
2 lbs potatoes (1/2" cubes)
2 cans cream of mushroom
3/4 c green onions (reserve 1/4 c for sprinkling on top)
1 tsp garlic powder
1 dash red pepper (I use garlic paste from the asian section of the grocery store in place of the garlic and red pepper)
1 1/2 c shredded cheddar cheese (I used colby jack)
1 c sour cream
1 c milk
black pepper to taste
In crock pot, combine potatoes, soups, onions and spices. Cook on low 6-8 hrs. Add dairy and let it warm through, then serve.
