4 c cream
2 lbs chocolate chips (Guittard is best)
1/4 c light corn syrup
1/4 t salt
Over med heat, bring cream to a full boil. Turn off heat. Add chocolate, and swirl pan to completely cover with cream. Whisk until smooth. Add corn syrup and salt. Stir.
You can beat ganache with a mixer to make it frosting when it is cool.
