Sunday Brunch Casserole
1/2 lb sliced bacon (cooked)
1/2 c chopped onion (I often substitute one green onion)
1/2 c chopped green pepper (optional)
12 eggs
1 c milk
1 pkg frozen hash brown potatoes (tater tots)
1 c shredded cheese (cheddar, mozza)
1 t salt
1/2 t pepper
Saute veggies--beat eggs and milk in a bowl. Add bacon, sauteed veggies, cheese, salt, pepper. Place tater tots in greased 9x13, then pour egg combination over. Bake uncovered at 350 for 35-45 mins. (Until knife inserted in center comes out clean.)
