Mom Hellwig's Potato Rolls

Potato Rolls

2 T yeast
2 c warm water
3/4 c sugar
1 T salt
3/4 c soft shortening (or 6 T butter and 6 T shortening)
1 c well mashed potatoes (usually one potato)
2 beaten eggs
7-8 c flour

Dissolve yeast in warm water. Add shortening, sugar, salt, and beaten eggs. Stir in mashed potatoes. Mix well. Add flour 2 c at a time to make a soft dough. Place in greased bowl and cover to let rise until doubled. Punch down and let rise. Shape into rolls and rise. (Grease pans) Bake at 350 until golden. (Can also be rolled into round, drizzled with melted butter, cut into triangles, and rolled from large end to small, like a butter horn)
