Cake Mix Peanut Butter Cookies

Okay, I am not a fan of cake mix cookies unless they are filled with cream cheese frosting, but my visiting teacher brought me these one Christmas, and I could NOT even tell they were from a cake mix! These are really melt in your mouth!

Peanut Butter Cookies

1 box yellow cake mix
1/4 c packed brown sugar
1/3 c water
1 c creamy peanut butter
1/4 c shortening or vegetable oil
2 eggs
Granulated sugar

Heat oven to 375, then in large bowl beat cake mix, brown sugar, water, PB, shortening, and eggs with mixer on medium until smooth. Shape dough into 1 inch balls. Roll in granulated sugar, and place 2 inches apart on cookie sheet. Flatten in criss cross pattern with sugar-dipped fork. Bake 10-12 mins. Cool one minute, then move to cooling rack. Makes about 54 cookies. Recipe also suggests adding Reese's Pieces for a fun option.
