French Bread (Dorothy's)

Easy French Bread

1 T yeast
2 3/4 c warm water
4 t salt
5 1/2-6 c flour

Dissolve yeast in warm water. Stir in salt and flour. Knead for 10 mins until smooth and full of bounce. Let rise until triple in volume. Divide into 2 loaves. Slash diagonally 3 times. Cover with damp towel, not letting it touch loaves. Rise 45 mins. Bake at 450 for 20-25 mins.
