For Crepes:
1 1/2 c flour
1 T sugar
1/2 t bkg powder
1/2 t salt
2 c milk
2 eggs
1/2 t vanilla
2 T melted butter
I usually combine all ingredients in the blender (add liquids first or flour just gets packed in on the bottom!)and I always have to double the batch for my crew. Heat your non-stick pan with a little butter so coats the pan. Pour into pan using a 1/2 c measuring cup (for smaller skillet.)Flip when bubbles are mostly popped. Second side only requires about 30 seconds. Fill and serve. Or butter and sprinkle with powdered sugar. My kids also like cinnamon and sugar sprinkled on it.
For Filling:
1-8oz cream cheese, softened
1 c whipping cream, whipped
1 c powdered sugar
1 t pure vanilla Add fruit of your choice.

OPTIONAL FILLING FOR DINNER CREPES/APPETIZERS
4 oz cream cheese
3 T heavy cream
4 t minced chives
4 oz smoked salmon, (or chicken)
