Lemon Streusel Muffins

This recipe makes 40 muffins, yes you read that right, so be prepared, or use your fractions! BTW 5/4 of people don't really understand fractions.... That still makes me laugh.

6 c flour
4 c sugar
3/4 t baking soda
3/4 t salt
8 eggs
2 c sour cream
2 c butter, melted
3 T grated lemon peel (orange would be yum, too)
2 T lemon juice (or OJ, if you change above)

Streusel
3/4 c flour
3/4 c sugar
1/4 c cold butter

Glaze: 1/2 c sugar, 1/3 c lemon juice.

In a large bowl, combine flour, sugar, bkg soda, and salt. In another, whisk eggs, sour cream, butter, lemon peel and juice. Stir into dry ingredients just until moistened. Fill greased or paper lined muffin tins 3/4 full. In small bowl, combine flour and sugar, then cut in butter til coarse. Sprinkle over batter, then bake at 350 for 20-25 mins. Cool five mins then glaze. Who can resist a muffin with struesel topping?
