BYU Mint Brownies--from BYU Magazine Fall 2003
1 c margarine
1/2 c cocoa (I prefer part of it, at least, to be Dutch-process)
2 T honey
4 eggs
2 c sugar
1 3/4 c flour
1/2 T baking powder
1/2 t salt
1 c chopped walnuts (optional)
12 oz chocolate frosting
MINT FROSTING
5 T butter
dash of salt
3 T milk
1 T corn syrup
2 1/3 c icing sugar
1/2 t mint extract
1-2 drops green food coloring
Brownies--melt margarine and mix in cocoa. Allow to cool. Add honey, eggs, sugar, flour, baking powder, and salt. Mix well. Add nuts. Pour batter into greased 9x13. Bake at 350 for 25 mins. Cool.
Prepare mint frosting by beating all ingredients. Spread over brownies, then place in freezer for a short time to stiffen the icing. Remove and frost with chocolate frosting.
