Moist Whole Grain Bread--recipe from Nicole
1/2 tsp sugar
1/2 c warm water
3 c. cooked whole grains (steel cut oats, quinoa, etc)
4 T cooking oil
1/4 c molasses
1/4 c honey
5 tsp salt
1 potato (cooked to mashing consistency in 4 c water--save water)
12-15 c flour
Start yeast mixture (first 3 ingreds) and let rise. Boil potato and mash well. Add cooking oil and molasses to potato water in large mixing bowl. Cool to room temp. Add cooked cereals and salt. Add yeast mixture, (can add nuts, sunflower seeds, flax, etc. here,) then add flour gradually, kneading. Let dough rise until doubled, knead out air and form into loaves. Put in greased loaf tins, then rise again (about 1 hour.) Bake at 375 for about 45 minutes.
