MARINARA SAUCE--(adapted from a recipe in a library book)
3 T olive oil
3 large garlic cloves (peeled and thinly sliced)
onions (optional, and to taste)
1/4 tsp chili garlic sauce (found in Asian section of grocery)
1-28 oz can tomatoes (sometimes I use fresh romas, or any tomatoes I have)
salt
1/4 c fresh basil leaves, torn
Heat oil, saute garlic and some onion if you would like. Do not let them brown! Stir in chili garlic 15 seconds, then pour in tomatoes. Boil, reduce heat, then season with salt and basil. Simmer 20 minutes until thick. We prefer to cool slightly and puree in blender, since we are used to Prego!
This recipe is very versatile.
CAFE RIO DRESSING--at least a pretty close substitute
1 c mayo
1 c salsa verde
2 cloves garlic
1 pkg buttermilk ranch dressing ( I prefer Hidden Valley)
1/2 c buttermilk
1 bunch cilantro (to taste)
1 jalapeno
Blend ingredients in blender until well mixed. Keep refrigerated.
