Buttermilk Corn Bread

I usually don't like corn bread because it is so dry. This recipe is actually very moist and cake-like.

Buttermilk Corn Bread-

1/2 c butter
2 eggs
1/2 t soda
1 c buttermilk
1 c flour
1/2 c sugar
1 c cornmeal
1/2 t salt
1-2 tsp dry instant vanilla pudding mix

Melt butter. Add sugar, stirring well. Add eggs and beat until well blended. combine buttermilk and soda; stir into egg mixture. Add cornmeal, flour, salt, and dry pudding. Stir until just blended. Bake at 350 for 30 mins in greased 8x8 pan. Pairs nicely with chili, barbecued ribs, chowders, etc.
